Hi everyone,
 
Last week I wrote about the delicious pear and arugula salad I had backstage during my visit to the @RachaelRayShow. In case you'd like to try it, here's the recipe, straight from the fantastic Rachael Ray culinary staff:
 
Grilled Pear Salad with Roasted Grape Vinaigrette
 
1 bunch red seedless grapes (about 15 grapes)
1/4 cup EVOO, extra virgin olive oil, plus a little for drizzling
Salt and pepper
1 tablespoon Dijon mustard
1/4 cup champagne vinegar
1/2 a lemon, juiced
2 cups arugula or any other green you like
2 pears, sliced about 1/4 inch thick
2 tablespoons pomegranate seeds
1 tablespoon crumbled blue cheese
 
Instructions:
Pre-heat oven to 400º
 
On a small baking sheet, toss grapes with a drizzle of EVOO and salt and pepper. Roast for about 10-15 minutes or until light brown and soft. Put roasted grapes in a food processor or blender and add the Dijon, champagne vinegar, lemon juice, salt and pepper and 1/4 cup of EVOO. Blend until smooth and combined. Add more salt and pepper to taste and a little more EVOO if you want it a little more mild.
 
In a large bowl toss the arugula with as much dressing as you like, start with a few tablespoons then add more to your taste. Add in half the pears, pomegranate seeds, and blue cheese and toss, serve on a plate then top with the remaining toppings.

Since you’ve already seen my schedule for the week, I thought I’d post a video montage of the week's busiest day—which you may have noticed was Wednesday! I made an appearance on the Rachael Ray Show, then did the Nate Berkus Show, and then walked the runway for the Heart Truth Red Dress Fashion Show! It was a lot to fit in, but I did it all and had a great time. And this video is proof ; ) Enjoy!
