Love that themed idea! I am one of those, sad to admit, that looks at the clock at 5pm or so and thinks, "what should I take out to defrost?"
Although, last night I did plan ahead as I was making a meal for a lady at my church who is going thru chemo treatments (I made a 2nd meal for my kids and I).
I made a chicken fettucine type meal using rotini noodles and tossed it with the new Philadelphia cooking cream Italian herb (okay, not thinking low cal, I know). I also cooked up some chicken tenders in a little bit of olive oil sprinkling garlic powder, onion bits and Italian herbs on them; which I dice up as they were cooking (and added a little bit of milk and the cream stuff towards the end to get the flavors) and tossed in with the noodles.
My favorite part was the salad. Using a mixture of baby romaine and spring mix, I tossed together a salad adding with feta cheese (herb flavored) and topped with some cran-raisins (this has become my favorite type of salad, whether I use a balsamic vinegrette or another light dressing, its my new fav).
Growing up we always had my grandmother's "Famous Sunday Dinner" It wasn't that famous but we loved going over for it. She always made pot roast, mashed potatos (peeled not the box kind), peeled carrots, peas, cottage cheese, applesauce, & fresh baked bread. YUM. My mom still occasionally says she's going to make Sunday dinner - through the week - but it's always been "Sunday Dinner" and mom makes the potatos out of a box! Cheat! No home made bread either but it's the thought that counts - and the memories too!

In Wisconsin, Friday night is fish fry night. One or two Fridays a year, I will eat the traditional fried perch, french fries, coleslaw and rye bread. Tonight however, I am grilling Salmon to make fish tacos. Place the seasoned salmon fillet into a whole wheat tortilla, top with an asian coleslaw (cabbage, ginger, carrots, sesame seeds, olive oil, and white wine vinegar) and enjoy. For dessert, Wisconsin grown cantalope and watermelon!
What we like to have once a week is called "Mexican Mess". You fry 1 lb. hamburger meat until it's brown. Drain. Add 2 cans whole kernel corn with liquid. Add salt, pepper, and chili powder to taste. I usually put a lot of chili powder. Grate in a lot of cheddar cheese. Crunch up lots of tortilla chips and add to the skillet. Let cook until all the liquid is gone. Serve with heated flour tortillas. We love it and I think you and your family will too. You can add other spices if you'd like.
We do Fajita night too..... for anyone thinking about it...I HIGHLY suggest marinating your meat in fresh lime juice ( we used two limes per steak or per two Chicken breasts), minced garlic, and a bit of sea salt. OMG! SOOOOOOOO goood!
